Santos Ruiz, an agronomist by profession, has been devoted to the world of rice for more than 25 years, being one of the greatest experts in the field. He knows rice better than anyone else, from the field to the table: its cultivation, its environment, its history and its cuisine, as well as the culinary and organoleptic attributes of the European varietal panorama. In Valencia’s Albufera, he has developed a new way of telling the story of agricultural activity.
