
Alberto Chicote
Alberto Chicote (Madrid, 1969) is one of the leading figures in contemporary Spanish cuisine, known both for his culinary talent and for his ability to communicate through the media.
Trained at the Madrid School of Hospitality, Chicote built his career working alongside great national and international masters, which allowed him to develop a technical, creative, and open vision of gastronomy.
He was a pioneer in fusing Spanish and Japanese cuisine with the groundbreaking restaurant NODO, and later promoted other concepts such as Pandelujo or Yakitoro. In 2022, Alberto and his partner and spouse, Inma Núñez, opened Omeraki in Madrid, his most personal project. The name combines the Japanese symbol Enso, which represents creative freedom, with the Greek term Meraki, which refers to putting soul and care into everything one does. From this union comes Omeraki, as a symbol of a cuisine that is alive, passionate, and constantly evolving.
Conceived as a space of creative freedom and approachable haute cuisine, Omeraki is the place where Alberto sought to capture his culinary vision.
